Breakfast Quesadillas



INGREDIENTS

1 medium onion chopped
1 red bell pepper chopped
3 medium potatoes diced
2 tbsp olive oil
2 tbsp butter unsalted
8 medium flour tortillas
6 eggs
2 links kabanos sausage sliced (optional, or can substitute with bacon)
2 avocados sliced
2 tbsp olive oil
2 tbsp butter unsalted
1/4 tsp salt or to taste
1/4 tsp pepper or to taste
Optional toppings
1/4 cup salsa
1/4 cup sour cream
1/4 tsp salt or to taste
2 cups Mexican cheese blend shredded



INSTRUCTIONS

In a big skillet heat one tbsp of the olive oil and prepare dinner the onion and potatoes till potatoes are tender. Season with salt and pepper. Add pink bell pepper and cook for another minute. Remove to a plate and set apart.
Add the other tbsp of oil to the skillet and fry the sausage until gently browned. Beat the eggs and pour over the sausage. Scramble the eggs across the skillet with a wooden spoon or spatula and cook till eggs are achieved. Remove to a plate and set apart.

In the same skillet soften half of tbsp of butter over medium warmness then vicinity a tortilla. Layer it with 1/4 cup cheese, 1/four of the potato combination, 1/4 of the egg/sausage aggregate, slices from half an avocado and some other 1/four cup of cheese. Top with a second tortilla.
